Mate tea is traditionally southern American. This green mate comes from Brazil and is grown at about 400 to 800 m above sea level. The taste is tart. Traditionally, mate is prepared with a calabash (drinking vessel) and a bombilla (drinking straw). The leaves are also called “yerba”.
The indigenous people of South America were the first to know how to use the mate bush (Ilex paraguariensis). Today it is the national drink of a large number of South American countries. The tangy mate flavor is also increasingly appreciated in Germany. In Argentina and Brazil, mate is an integral part of many people’s daily lives. It is a drink for young and old and is drunk in the morning as well as in the evening. But above all, it is symbolic of an attitude to life. Drunk in convivial company with friends, mate accompanies many conversations.

Here’s how you prepare mate:
- Take the calabash and put the bombilla (drinking straw) in it at an angle
- Now fill the mate to the very top
- Now fill the calabash with 70 °C hot water. Important: Do not stir! The bombilla remains in its position.
- Drink the mate tea immediately. The first infusion is the most bitter, so traditionally the host drinks it
- Keep adding water and passing the calabash around the circle – or keep it all to yourself. We also find this absolutely understandable.
