The coffee plant, scientifically known as Coffea, belongs to the Rubiaceae family and is native to tropical regions around the equator. Originally from Africa, Ethiopia to be precise, it has since spread to various parts of the world, including Latin America, Asia and even some regions of the Pacific. It is an evergreen shrub or tree that can reach a height of 2 to 10 meters, depending on the variety. The two best known species are Coffea arabica and Coffea canephora, also known as Arabica and Robusta. Arabica is considered the more noble and sophisticated variety with a mild, aromatic flavor, while Robusta is stronger, more bitter and contains more caffeine.

The cultivation of coffee plants requires certain climatic conditions, including a constant temperature of about 20-25 degrees Celsius and sufficient rainfall. The soil should be well drained to avoid waterlogging. For this reason, coffee plants are often grown in mountainous regions where these ideal conditions are common.

Harvesting the coffee cherries, as the fruits of the coffee plant are called, is a laborious process. The fruit is harvested by hand or by machine, depending on local conditions and the requirements of the crop. After harvesting, the fruits are processed to extract the coffee beans. This process can be dry or wet and has a significant impact on the taste of the final product.
