Green teas are leaves of the tea plant, but unlike black tea, they do not oxidize. During oxidation, the cell sap of the leaves reacts with the ambient air. To prevent this, the tea is either steamed or heated in an iron pan (panfiring). Japan is known for steaming its green teas, while China mainly produces green teas using the panfiring method.

Green tea is an important part of Japanese culture and has a long tradition in Japanese tea ceremony. In Japan, green tea is also known as “ryokucha” and is one of the most popular teas in the country. The importance of green tea in Japan goes beyond its mere taste. It is often served at social occasions such as tea ceremonies or as a welcome gesture at business meetings.

Origin of the tea plant

Green teas are completely unoxidized (they also say unfermented) teas. All teas, whether black, white, yellow or green, come from the same tea plant. There are several species of tea plants. The two “originating plants” are the Thea Sinensis and the Thea Assamica. Both species were and are crossed with each other. Thus, you get tea plant hybrids with special requirements, strengths and flavor characteristics. However, the taste of a tea also depends greatly on the method of cultivation, the place of cultivation and how the tea is processed. How to prepare green teas correctly

Green teas are sensitive to water that is too hot. As a general rule, do not use water hotter than 70°C. The water should be as soft and fresh as possible. Matcha: The king of green teas

Matcha is a type of green tea popular in Japan and China for centuries, made from finely ground, powdered tea leaves. Matcha culture has a long tradition in Japan and remains an important part of the country’s cultural heritage. Matcha is not only enjoyed as a beverage, but also used as an ingredient in many dishes such as ice cream, cakes and sweets. Preparing Matcha requires a special technique and is often done in special tea rooms known as “chashitsu”.
