Green teas are leaves of the tea plant, but unlike black tea, they do not oxidize. During oxidation, the cell sap of the leaves reacts with the ambient air. To prevent this, the tea is either steamed or heated in an iron pan (panfiring). Japan is known for steaming its green teas, while China mainly produces green teas using the panfiring method.

How to prepare green teas correctly

Green teas are sensitive to water that is too hot. As a general rule, do not use water hotter than 70°C. The water should be as soft and fresh as possible.
